Traditional Armenian recipes from Grandpa Charlie's Garden.
Grandpa Charlie's Shish Kebab
4 lbs lean leg of lamb, beef filet, or chicken
cut into 2" cubes.
Marinade
2 onions diced
1 bell pepper diced
1/2 c. parsley chopped
4 cloves garlic minced
1 dry bay leaf
1/4 c. olive oil
1/4 c. lemon juice
1 tbs. wine vinegar
1/2 c. burgundy wine
Salt & pepper to taste
In a large nonmetallic bowl, stir together marinade ingredients. Add meat, stir to coat, cover and refrigerate 4 to 24 hours, stirring several times. Thread meat cubes on skewers. Or alternate meat with vegetables--mushrooms, squash, eggplant, etc. Place skewers on barbecue grill or broil in the oven 12 to 15 minutes until done. Serves 8. Enjoy!
